Granola Butter Cups


Prep time: 20 minutes



Yield: 9 cups


  1. Line a muffin tin with muffin paper liners. Set aside. 
  2. In a medium bowl, melt chocolate chips and coconut oil.
  3.  Scoop 1 tbsp of melted chocolate on the bottom of each liner. Freeze for 10 minutes. 
  4. While the chocolate freezes, prepare the filling ingredients by combining granola butter and coconut flour in a small bowl. 
  5. Scoop 1 tbsp of filling on top of frozen chocolate layer. Flatten slightly into circular shape.  Freeze for 5 minutes to set. 
  6. Scoop another 1-2 tbsp of chocolate on top. Freeze for another 10 minutes. 
  7. Enjoy!
  8. Store in the fridge or freezer in an airtight container.
