Our mission at Coyotas is to dignify the tortilla. One way we do that is to celebrate the beauty of tortilla-making.
I returned to my hometown in Sonora, Mexico, to learn from the amazing women who handcraft tortillas everyday in the unrelenting desert heat. These women are smart, strong, and skilled and they inspired me to create an innovative yet simple tortilla without grains, gluten, or gums.
